Following the discovery of reef gold deposits in the early 1860's, Hill End became one of. the largest inland towns of New South Wales. Prospectors and their families came from all over the world to try and make their fortune. Many of the European settlers brought with them their recipes for herbal tonics and in some cases brought the seeds of the botanicals to ensure that
they were able to make the tonics each year.
Hill End is a classic example of where the legacy of such plantings is still to be seen in
the many hawthorn trees scattered around the town. Hawthorn was considered to reduce fevers and assist in cardiac complaints. There is much speculation as to whether they drank these tonics neat or as a vehicle for much stronger drinks.
The ingredients of Hill End Herbal Tonic include underground spring waters, Apple juice, Blackcurrant juice, Elderberry, Infusions and extracts of Hawthorn berries, Thyme, Chamomile, Sarsparilla, Dandelion. Preservative 211 and 202
